Sweet Yam Tart, an adaptation of an African-American and Southern dessert favorite, we roast our potatoes to intensify the flavor and add butter for a velvety smoothness. A pecan French P‰te BrisŽe pastry crust, Chinese Cassia Cinnamon, East Indian Nutmeg, and Madagascar Vanilla Beans complete this absolutely aromatic dessert Ð our tribute to three wonderful culinary mentors, my mother and grandmothers.
